Jinyu Junmai Ginjo from Japan’s Nabedana is a sake with soft, gently sweet spice and delicate fruit. Expect notes of pear and lychee, rounded almond, jasmine rice and an almost water-clear, pale yellow hue in the glass.

Serve chilled with sushi, tempura or other Japanese dishes where rice, soy and a mild salinity call for something elegant alongside. It also works beautifully as an aperitif, preferably over a single ice cube when you want something understated and stylish before dinner.
