Txakoli Rezabal comes from D.O. Getariako Txakolina in the Basque Country and is made from 100 percent hondarrabi zuri. The grapes are grown on the slopes around the coastal town of Zarautz. Towards the end of fermentation, the tanks are sealed to retain some of the naturally formed carbon dioxide, giving the wine its gentle spritz.

The wine is fruity and wonderfully crisp, with notes of green apple, gooseberry, mineral, fresh herbs, whitecurrant and lemon. Serve well chilled, around 8–10°C, with fish and seafood, salads or tomato-based pasta dishes. Also brilliant when you want something fresh in the glass before dinner.
